Mojito Recipe

Warmer months and mojitos are one of my favorite combinations! Get me next to the pool with a fresh, crisp mojito and I am one happy gal! This is my go to drink when we are at the beach because of how refreshing it is. In my opinion, it is one of the best spring/summer cocktails! This is my simple and delicious mojito recipe!

Mojitos are a great drink for the warmer months because of how refreshing they are! The mixture of mint and lime creates a crisp flavor that will cool you off in the summer heat! The club soda adds the bubbly aspect that helps you feel like you are drinking a refreshing soda and the rum just adds a little spark of happiness in my opinion! This simple mojito recipe is an easy go-to recipe for me this summer!

Mojito Recipe

Prep time | 5 mins
Cook Time | 10 mins

 

Ingredients

2 ounces White Rum
1 ounce fresh Lime Juice
½ ounce simple syrup
5-7 leaves of fresh mint
Club Soda
Lime Wedge

Simple Syrup Recipe

Ingredients
1 cup Sugar
1 cup water

  1. Combine the sugar and water into a small saucepan and bring to a boil. Let it simmer over medium heat until the sugar has dissolved.

Directions:

1. Place the mint leaves into a cocktail shaker and use a cocktail muddler to break down the leaves until you can begin to smell the aromas of the mint. Don’t break the leaves into tiny pieces. Gently press the leaves to get the juices out of the leaves and into the bottom of the cup. This step shouldn’t take very long.
2. Add your rum, lime juice, simple syrup and some ice to the shaker with your muddled mint. Shake until all ingredients are combined and chilled.
3. Strain the drink out of the cocktail shaker into your favorite cocktail glass filled with ice. Top it off with a splash of club soda.
4. Add a lime wedge to the rim and a few mint leaves to garnish.
5. ENJOY!

Summertime is one of my favorite times of the year and it always makes me realize that I am currently in “the best days” of my life. I say that because life is wonderful no matter what season you are in. Currently as I write this, I am married to a man in law school and we are living an incredible life in Tucson, Arizona with our golden retriever, Ellie. While many people would see us as “struggling” because we are living on one income and one of us went back to school full time, we don’t see it that way. A lot of you have kids, which is incredible, and we are excited for that stage when it becomes time. But these are the days.

My point is to take it in. Every day can be a “these are the days” moments no matter what you are going through. Try to find the joy in the middle of the suck. We could let the struggles hold us back but instead, we are embracing our new city and making the most of it! Life is short. Embrace every moment that you can!
