Bellini Recipe

If you enjoy a sweet and fruity cocktail, then a Bellini is a drink to try! Bellini’s are so delicious and full of peach sweetness! They are very simple to make and easy to make in large batches to share with a large group. This is my Bellini recipe!

Bellini’s are delicious and refreshing. They are filled with the flavor and aroma of peaches and the Prosecco adds a delicious addition of bubbles! It is such a fun drink for a bridal shower, brunch or happy hour with the girls. With just 2 ingredients, it is a wonderful drink and easy Bellini recipe to throw together!

Ingredients

  • 4 peaches*
  • 1 bottle Prosecco
  • Peach slices for garnish

Peaches

You can make this particular cocktail with various forms of peach flavors. You can use fresh peaches, frozen peaches, peach liquor or sweet peach nectar. Personally, I like to use frozen peaches for a couple of reasons. 1. they are already chilled when you puree them so they are ready to be added to your drink immediately after and 2. you don’t have to manually peel fresh peaches but you still get the taste of the fresh peach compared to a syrup.

However, if you use fresh peaches, you will get a more fresh tasting cocktail. If you are using fresh peaches, it is important that you peel the skin off of all the peaches. Cut all of the peaches in half and remove the pits.

If you are using frozen peaches, make sure that you let the peaches thaw completely before blending. They will not blend properly if you blend them while frozen.

Cocktail Directions

  1. Add your peaches of choice in a blender or food processor and blend until the puree is completely smooth. If you used fresh peaches, place the puree in the refrigerator to chill for about 30 minutes. If you use frozen peaches, the puree should already be chilled and ready for mixing!
  2. Once the puree is chilled, pour 1/4 cup of peach puree into a champagne flute. Carefully pour the chilled Proscecco over the puree until the glass is full. Be patient to make sure that the glass does not overflow during this step.
  3. Gently stir to mix the ingredients.
  4. Add a peach slice to the rim for a garnish.
  5. ENJOY!
